Full Recipe:
Sushi Rice
- Combine in a bowl until sugar dissolves:
- 1 tbsp bakers sugar
- 1 tbsp rice wine vinegar
- 1 tbsp mirin
- Mixed into cooked rice
Make the Crispy Fried Green Beans (like french fries)
- Heat a bunch of oil in dutch oven for deep frying
- Make a breading station with one bowl of milk, one bowl of flour, and one bowl with one cup panko bread crumbs mixed with ½ tablespoon garlic powder
- Bread the green beans by rolling in flour, then milk, then panko mixture
- Fry until golden brown (3-4 minutes)
- Season with a lot of salt and furikake
Make Special Sauce for green beans and burgers
- Mix to taste: Kewpie mayo, sriracha, chopped pickled cucumber
Make the McKoyBert Sushi Burgers
- Make the spicy tuna and salmon “hamburger patties”
- Chop the tuna into very fine pieces and mix in wasabi paste and mayo. Form into 3 patties using the mold. Set aside.
- Chop the salmon into very fine pieces and form into 3 patties using the mold. Set aside.
- Make the Crispy Rice Buns
- Heat a few inches oil in cast iron skillet
- Mold the pre-made sushi rice (rice with salt, sugar, rice wine vinegar, and mirin) into discs using molds
- Fry the discs until golden brown and crispy
- Top with sesame seeds
- Assemble the burgers
- Add in a layer of avocado
